Sweet Potato and Asiago Gratin

117_seetPOt13989496_thbNeed a great side dish to go with your next meal?  I get asked for this recipe over and over.  Sweet Potatoes give an old standard a new twist.  Paired with grilled or roasted meat, it's a winner for sure!  This can also be prepared the day before and precooked…making the final cooking the day you want to serve it breeze.

Sweet Potato  and Asiago Cheese Gratin for 2

  • 1 lb sweet potato’s sliced thin
  • 1 cup grated Asiago Cheese
  • 1 pint heavy cream
  • 3 Tablespoons of fresh thyme, cleaned from the stem
  • Salt and Pepper

Layer the potatoes in a small casserole dish. Salt and pepper each layer and add a healthy sprinkle of cheese, sprinkle with thyme, then add another layer etc. Follow this until the potatos are gone. Pour in the cream allowing it to make it's way all through the potatoes. Bake at 375 degrees until it has just started to get tender, about 45-60 minutes. Cool it, cover it and refridgerate it. On Valentines it will take about 30 minutes to finish cooking and it will be bubbly and golden on top.
