One of the jewels of summer, corn on the cob, is a BBQ staple. Whenever people come to eat at our house, they always comment on my corn, "It's perfectly cooked, how do you do that". Well, easy...here is what I do.
There are many methods to preparing corn. You could remove the hairs, wrap it back in it's husk and throw it on the BBQ. Maybe you want to shuck it, wrap it in foil with some salt, pepper and cotija cheese and put it in the oven or on the BBQ. For me, the easiest most fool proof way to get corn that's crisp, tender and never chewy is the old stand by, boiling water.
After it's shucked, drop it in a large pot of boiling water. Put the lid on and turn it off. After 10 minutes, it's perfectly cooked. Never overcooked, never undercooked and always super easy!
Give it a try....corn is about to come into it's summer best in a big way....take advantage of it while we have it.
