I found this recipe in Giada’s Kitchen: New Italian Favorites – you can easily replace the Prosecco with Sparkling White Grape juice for a kid friendly version – this will quickly become a favorite for brunch time cocktails!
Pomegranate Cranberry Bellini’s
Serves 8-12
Simple Syrup:
- 1 cup water
- 1cup sugar
In saucepan, combine water and sugar over medium heat. Once it begins to bubble, reduce heat, and simmer for 5 minutes, stirring until sugar dissolved, Take off heat and allow syrup to cool. (Can we made ahead and kept in fridge for up to 2 weeks)
Bellini’s:
- 1 cup ice
- 1 ½ cups simple syrup
- 1 ¼ cups pomegranate juice chilled
- 1 cup cranberry juice, chilled
- 1 bottle Prosecco chilled
- 2 limes thinly slices for garnish
- Fresh mint for garnish
- ½ cup pomegranate seeds for garnish
Place ice in 6-8 cup capacity pitcher. Add simple syrup, pomegranate juice, cranberry juice and stir well. Slowly pour in the Prosecco. Divide pomegranate seeds between 8-12 champagne flutes, add slice of lime and 1 sprig of mint to each glass and pour Bellini mixture into each glass.
