Super Easy Guacamole !

avocadophotoxpress_5070277No Cinco de Mayo party would be complete without Salsa (A great recipe here) and Guacamole.  Now, you could buy it pre-made but come on my peeps, I know you all want and appreciate the homeade goodness.  THIS is the easiest Guac ever and I promise people will compliment you over and over.  It's so easy I whip it up really quick and home just to eat.  No special occasion required for this one.

Ingredients:

  • 4 Ripe Avocados
  • 1 Large Lime
  • 1-2 Scallions (depending on size)
  • 1 Tablespoon Mexican Chili Powder
  • Hot Sauce
  • Salt and Pepper to taste

 

Yep, that's it!

To start, you just need some ripe Avocados.  You want them to give a little when squeezed but you don't want them soft or over ripe.  Cut them in half and scoop out the Avo into a bowl.  Squeeze almost all the lime over them so they won't brown and begin to mash them with a fork.  You can decide if you want it chunky or smooth and mash until you are happy.  Slice the scallions thinly and add them along with the chili powder.  Add hot sauce to taste, starting with a teaspoon.  Add a tiny pinch of salt and a few grinds of black pepper and taste.  If it needs to taste "brighter" add more lime juice.  Try lime juice before salt, it makes a huge difference.  You can add more hot sauce if you want more kick....I like Tapatia and I also use Sriracha, which seems weird because it's chinese chile sauce but it's a really great addition.  But use what you like.  If you want it very mild, you could add a spoonfull or two of mild salsa as well.

What you have is an incredible tasting and super easy Guacamole.  From here, you could zing it up if you wanted by adding diced chili's, cilantro, roasted corn or black beans.  Whatever you like.  Some people like white or red onions in theirs, and you could do that as well.  So keep it simple or make it fancy, this Guacamole will be a great addition to your party, for chips or for a topping to tacos or enchiladas or whatever!
